A note to the dairy free

on the subject of leftover candied sweet potatoes:

If you use coconut oil instead of butter, be sure to reheat your leftovers instead of eating them cold. The coconut oil chills very solid and the texture is not terribly pleasant. I suggest throwing another handful of marshmallows on top and sticking it back in the oven for a few minutes 🙂

  1. Too funny. I have had many coconut oil solidifying mishaps!

  2. You know i love the stuff, it is a godsend for substituting for butter, but it just does not chill well!! (As in it’s like glaciers formed on the sides of my sweet potatoes…)
