I’d really like to make this. Trying to decide if it’s worth all the effort. I mean, I dont even have a flan dish. But it sounds good.

Green Pepper and Eggplant Flan

Serves 4

For the pastry

1 1/4 cups fine oatmeal

3/4 cup cooked mashed potato

1/2 cup olive oil

pinch of salt

For the filling

2 eggplant, thinly sliced

sea salt

2 green peppers thinly sliced

8-10 pitted olives, opional

for the sauce

1 cup vegetable stock

1 onion finely chopped

1 tbsp corn starch

1 tbsp freshly chopped basil

sea salt

Preheat oven to 325F

To prepare flan case, mix together the ingredients using a little cold water to make a firm dough. Roll out between two sheets of wax paper or tough polythene and mold into a 9 inch flan dish.

For the filling, sprinkle the sliced eggplants with salt and leave for 30 minutes. Drain and dry on kitchen paper (this removes the bitterness). Steam or boil in a little water for 3 to 5 minutes until just tender and arrange in the flan case with the green peppers and olives.

For the sauce, bring the stock to a boil and cook the onion until soft.  Mix the corn starch with a little cold water and stir into the stock to thicken the sauce. Add the basil and salt, and pour into the flan case. Bake for 40 minutes.
